Ground beef in a tube vs fresh?
Has anyone tried those and how does it compare? I can't remember if it's frozen or thawed. I see it in passing on occassion. I try to use up all the ground meat in a tray when I buy them fresh because I don't have a vacuum sealer. May be these have preservatives and keep longer? Speaking of which, air chilled chicken seems to keep much longer than the generic variety. 3-4 days in the fridge I start to smell the funkiness of the regular chicken bitbairbchilled o can keep for a damn week+ and it still has no odour which is a bit alarming.

Well, they are better sealed, I do not like it as much as it doesn't taste as fresh. In a chilli it is fine, but I would not use them to make hamburgers.
How much do you need to freeze? When I buy the Costco trays, I will divide them up, double wrap the chunks in plastic wrap then put it in a ziplock bag. They will last a few months this way, if I buy a lot, then I vacuum seal. The other option that works well is I will cook it fresh with my base seasoning, and then stick them in ziplock bags. Then I already have precooked ground beef, or meatballs.

The problem with the ground beef tube is that you rarely see one with at least a small clear spot on the packaging where you get to see the actual ground beef.
You're taking your chances.
I find that the tubes are not as lean.
The tray at Walmart (for the same $10) at least lets you clearly see what you are buying.
If it ain't broke, don't fix it!

First of all, don't keep fresh chicken in your fridge for that long. Two days max no matter how far in advance the BB4 date is.
The 1 lb ground beef tubes I buy and use only for making burgers in a pan or griddle. Slice them into pucks and smash em down. For all other ground beef uses I buy the tray.
Just like chicken, ground beef in the tray (the non-gas filled trays) should be in your fridge no longer than 1 day. Freeze or consume.

I used to buy tubes but they are ground too damn fine. Now I buy a 4 lb tray and split it into quarters and ziploc it like Macx2mommy, but then I pack those bags together into a larger freezer bag.

Do grocers get poultry delivered every day? I always imagined they had stock sitting in the back enough to last until their next delivery which is just temperatures similar to our home fridges. And what has gas do they use to seal the packages?

The issue I have with the tubes is that the stuff comes out looking like a paste. It's not the right texture for the dishes I need ground beef/chicken for.

The grocer's meat cooler storage temperatures are cooler than their display case temps and home fridges. Good meat managers don't allow their poultry to be on display for more than a couple of days regardless of poultry plant pre-packed BB4s.
The gas with low oxygen content helps preserve the meat.

I stopped buying the tubes of ground beef several months ago in favor of buying trays that I divide up and freeze. I find the quality somewhat better, the sale price is often a bit lower, I can portion into whatever weights I want, and when I want to use some right away, it doesn't have to be thawed.
I've never purchased ground chicken in tubes. I saw the thawed product once, and that was enough for me to rule out buying it.

...as I've already mentioned in this thread, the problem with tube anything, is that you don't get to see the actual product until after you take it home and open it, unlike the trays, where you can clearly see what you are actually buying.
